I guess you dropped it in when the oil was too hot which caused the hard part and after the puff puff had crowded the pan thereby reducing the temperature of the oil , the puff puff then starts to absorb the oil.

Some times it happens while some times it is perfect. Hi Ginika, it is usually due to the potency of the yeast. If the yeast is weak, then it will take longer to rise and if is expired it won't rise at all.
So make sure you preserve your yeast well and always check the expiring date before use. Self rising flour has baking powder and salt added to it.
I haven't tried making puff puff with it, but a few people swear that it comes out fine too. Thank u very much Aunty, please can i use flour that is already mix with the same ingredient except nutmeg over two days and kept in the fridge for it.
Just want to add nutmeg and little sugar. Hi dear, if it is just the dry flour that is in the fridge, simply take it out of the fridge and let it return to room temperature, then add the warm water and the remaining ingredients.
Pour oil into a deep pan. The oil should be atleast 3inches deep. Let the oil heat up and scoop the batter into the oil with your hand.
You can also use ice cream scoop. Test the oil by dropping a bit of batter in it. If it rises up after few seconds then the oil is ready. Best served warm.
